My mom made oatmeal pancakes all my life, being a great fan of fiber :), and these take me right back to my childhood. Personally, I prefer buttermilk pancakes, but nothing made my your hand would taste anything but delicious, Lesley.
Tara - They are, although my husband still prefers his plain-old buttermilk pancakes. We're workin' on the whole healthy thing. ;) And, yes. Definitely something you could make for dinner!
Bellezza - You and Rod! I don't know why I like these better than buttermilk pancakes. Maybe they just feel a bit more substantial. And they still have the buttermilk flavor. :)
