  2. My husband loves beet salad, and that one looks exceptional. I love seeing all the "wind and sunshine" where you are, which is an expression I heard a bonsai teache2d use. It seems fitting for so many things! xo

    1. Meredith, that beet salad was outstanding. I bought some prepackaged cooked beets at the grocery store the other day and was sorely disappointed. I've been shredding some raw for salads and wraps, but the cooked ones from the store had a terrible flavor. Ah, the "wind and sunshine" is constantly changing to "wind and rain and hail" this week. :) Probably not as blustery as it is for you, though!

    1. Candace, I'm new to beets and love them shredded raw in salads and wraps. Now to try roasting some myself! Yes, it was a great day. Robin is a kindred spirit and I'm so happy we live fairly close now.

    1. Iliana, it was such a fun lunch date. The weather couldn't have been more cooperative, either. We're hoping to do it again in April after I returned from a 3-week long road/camping trip!
